Week 4 - Shakshuka & soda bread

A rich, tasty tomato sauce with some soft eggs nestled inside, served with hot soda bread.


Basic ingredients

1 brown onion

1 red pepper

1 can of chopped tomatoes

Cherry tomatoes

Eggs (1 per person)

Spices: garlic, cumin, paprika (smokey), chilli (any)


Soda bread ingredients

Flour (plain/self raising)

Bicarbonate of soda/baking powder

Buttermilk OR plain milk/soya milk and a lemon


Luxury ingredients (optional)

Feta / mozzarella

Sun dried tomatoes

Spinach

Fresh parsley/coriander/mint



PREP

Heat oven to 180 fan / 200 normal / gas mark 6


Put cherry tomatoes in oven proof dish and cover with olive oil.


COOK


Mix 350g of flour with 1tsp bicarbonate of soda and 1tsp salt. In a jug, pour 290ml of butter milk (or plain milk and a squeezed lemon).


Make a well in the flour mix and pour 3/4 of the liquid in, stirring with a fork. You are aiming for a soft, playdough consistency. Add the rest of the liquid if required. If too sticky, add more flour.


Make a ball with dough, don't kneed, then place on a flour-dusted baking tray. Flatten a little and use a knife to make a cross in the top. Dust with flour on top.


Put bread in oven in the middle shelf, and tomatoes on bottom shelf. Set timer for 30 mins.


Hint: when you take the bread out, if you like a crunchy crust put on a wire rack, if you like a softer bread then wrap bread in a tea towel.

Shakshuka

Fry sliced onion, pepper and a diced carrot in olive oil for around 10 mins.


Add in this order: sun dried tomatoes, fresh chilli, garlic, dried chilli, 2tsp cumin, 2tsp paprika. Stir after each item.


Next through in a tin of tomatoes and two squeeze of tomato puree. Simmer until nice and thick.


Optional: add olives and spinach to mixture.


Make a deep well with the back of a spoon and put an egg in. Simmer until egg is done to your liking. You may need to cover with a lid or foil if it takes a long time.


GARNISH

Top with feta/mozzarella and chopped fresh herbs (mint/coriander/parsley).


Serve with hot soda bread and butter, and the roasted tomatoes.
