Week 7 - Queen of nut roasts

This isn't just any nut roast, this is the royal version complete with feta and a caramelised parsnip base.


Serve this up for Sunday lunch, Christmas dinner or for a protein rich dinner for the whole family.


Please note: this contains nuts.

Basic ingredients

200g of mixed nuts (pecans, almonds, pine nuts, pumpkin seeds, walnuts - your choice)

2 leeks

2 eggs

1 punnets of brown mushrooms

Bread crumbs (3 slices of old bread works fine)


Spices: Garlic, chill, paprika Herbs: fresh rosemary, thyme, parsley


Luxury version (optional)

3 parsnips

Maple syrup/honey/golden syrup

Vacuum pack of chestnuts

Feta flax seeds

Pumpkin seeds

Fresh sage
